The Producer and The Farm: Josafat Ameca, has a long experience growing high quality coffees. His sensitivity to know when a plant needs more attention is astonishing. He manages the whole process of planting, harvesting and processing. He has implemented a technique (mulching) that consists of placing a layer of organic material such as mulches of grass and weeds around the coffee plants to help conserve soil moisture, regulate soil temperature, prevent weed growth and improve soil structure as the material decomposes.
La Finca Trincheras, The farm is located in a spectacular ravine with cliffs several hundred metres high that end in small rivers and waterfalls, with an optimum height and the farm's shade is provided by nitrogen-fixing tree species that provide a high level of natural fertilisation, such as Inga Vera, Inga Edulis, Alnus acuminata, which form part of the canopy cover.
